Abstract:
The latest extraction technology of natural pigment beet red was reported, and the extraction rate was more than 97.3%. The physical and chemical properties of beet red were analyzed and studied.

Abstract:
The physical and chemical properties of red pigment in C3 halophytes Suaeda OSA were studied, and the changes of light, temperature, effect of salt on red pigment accumulation. The results show that the red pigment is soluble in water and insoluble in organic solvents, light inhibits its accumulation, stable under acidic conditions, red, unstable under alkaline conditions, yellow, the maximum absorption peak was 538nm. According to these characteristics, this kind of red pigment is preliminarily determined as betacyanin. Dark, low temperature, high salt environment is conducive to the accumulation of betaine glycosides in Suaeda salinity, and the dark during germination is an important factor to induce the accumulation of betaine glycosides.
